Cauliflower Crust Pizza

Today I bring to you an incredibly fun and easy mouth-watering recipe. This is a recipe that I used when I assisted in teaching for an outreach program in my community. I taught kids (specifically preschoolers and young children 4-9 years in age) how to make fresh from the garden meals from local, organic produce. They loved it and I know you will too! You can make it with your friends, your family, or even yourself! And the best part is, it is healthy. Plus, you can tailor this recipe to your dietary needs, whether you may be vegetarian, lactose intolerant, dairy-free, etc.
Ingredients:
1 head cauliflower, 7-8″ wide
1/2 c Mozzarella cheese
1 egg, large
1 tsp Italian herb or basil seasoning
1/4 tsp fresh group black pepper
Tomato sauce or pesto, 8 oz
Any pizza toppings you enjoy
Directions:
Preheat oven to 375°F. Line a round pizza baking sheet with parchment paper.
Rinse cauliflower, remove outer leaves, and separate florets. Put florets into a food processor until a “rice” texture forms.
Place “rice” texture florets on the prepared baking sheet. Bake in oven for 15 minutes.
Remove the cooked cauliflower from the oven and transfer it to a bowl lined with a dish towel or cheesecloth.
Squeeze any liquid out of the cauliflower (CAUTION: hot!) as best you can. Do this a few times.
Increase oven to 450°F.
Transfer cauliflower into a mixing bowl. Add the egg, cheese, herbs, and pepper. Mix.
Transfer mixture to a baking sheet and flatten the mixture with hands. Bake for 15-20 minutes.
Remove from oven and top crust with tomato sauce or pesto and your favorite pizza toppings.
Top pizza with cheese and bake until golden brown.
